  1. In a food processor, pulse the oats, almond flour, ginger powder, cinnamon, and salt until combined.
  2. Add dates, maple syrup, vanilla extract, and coconut oil. Pulse until the mixture sticks together when pressed between your fingers. If too dry, add 1 teaspoon water at a time.
  3. Scoop about 1 tablespoon of the mixture and roll into balls.
  4. If desired, roll balls in shredded coconut for an extra texture boost.
  5. Place energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to set.
  6. Store in an airtight container in the fridge for up to one week.
