Christmas Chicken (Holiday Herb & Spice Roast)

🧾 Ingredients:

For the Chicken:

  • 4 bone-in chicken thighs or breasts
  • 1 tablespoon True Organic Black Pepper Powder
  • 1 teaspoon True Organic Cinnamon Powder
  • 4–5 True Organic Whole Cloves (crushed lightly)
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary or thyme
  • 1 tablespoon lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil or melted butter
  • Salt to taste

For the Veggies (Optional):

  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • Salt & pepper

👩🍳 Instructions:

  1. Prep the Chicken:
    Pat chicken dry. In a bowl, mix cinnamon, black pepper, crushed cloves, rosemary, paprika, garlic, lemon juice, and olive oil.
    Rub the mixture all over the chicken.
  2. Rest the Chicken:
    Let it marinate for 15–20 minutes (or overnight for deeper flavor).
  3. Prepare the Veggies (Optional):
    Toss carrots, potatoes, and onion with olive oil, salt, and pepper. Spread on a baking tray.
  4. Roast:
    Place chicken on top of the veggies or on a separate tray.
    Bake at 400°F (200°C) for 45–55 minutes, until golden and fully cooked.
  5. Serve:
    Drizzle the pan juices on top.
    Enjoy with rice, bread, mashed potatoes, or salad.
