Christmas Chicken (Holiday Herb & Spice Roast)

🧾 Ingredients:
For the Chicken:
- 4 bone-in chicken thighs or breasts
- 1 tablespoon True Organic Black Pepper Powder
- 1 teaspoon True Organic Cinnamon Powder
- 4–5 True Organic Whole Cloves (crushed lightly)
- 1 teaspoon paprika
- 1 teaspoon dried rosemary or thyme
- 1 tablespoon lemon juice
- 3 garlic cloves, minced
- 2 tablespoons olive oil or melted butter
- Salt to taste
For the Veggies (Optional):
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 onion, sliced
- 1 tablespoon olive oil
- Salt & pepper

Prep the Chicken:
Pat chicken dry. In a bowl, mix cinnamon, black pepper, crushed cloves, rosemary, paprika, garlic, lemon juice, and olive oil.
Rub the mixture all over the chicken. -
Rest the Chicken:
Let it marinate for 15–20 minutes (or overnight for deeper flavor). -
Prepare the Veggies (Optional):
Toss carrots, potatoes, and onion with olive oil, salt, and pepper. Spread on a baking tray. -
Roast:
Place chicken on top of the veggies or on a separate tray.
Bake at 400°F (200°C) for 45–55 minutes, until golden and fully cooked. -
Serve:
Drizzle the pan juices on top.
Enjoy with rice, bread, mashed potatoes, or salad.
