Coconut Milk Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup True Organic Unsweetened Coconut Milk
  • 1 egg
  • 2 tablespoons sugar (optional)
  • 1 tablespoon melted butter or True Organic Refined Coconut Oil
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • Pinch of salt

For Cooking:

  • Additional butter or coconut oil for the pan

👩🍳 Instructions:

  1. Mix Dry Ingredients:
    In a bowl, whisk flour, baking powder, sugar, and salt.
  2. Add Wet Ingredients:
    Add coconut milk, egg, vanilla, and melted coconut oil/butter.
    Whisk until smooth—do not overmix.
  3. Heat the Pan:
    Set a non-stick skillet over medium heat and lightly grease with coconut oil.
  4. Cook the Pancakes:
    Pour ¼ cup batter for each pancake.
    Cook until bubbles form on top and edges look set (about 2 minutes).
    Flip and cook another 1–2 minutes until golden.
  5. Serve:
    Stack pancakes and top with maple syrup, fruits, or shredded coconut.
