Coconut Milk Pancakes

Ingredients:
- 1 cup all-purpose flour
- 1 cup True Organic Unsweetened Coconut Milk
- 1 egg
- 2 tablespoons sugar (optional)
- 1 tablespoon melted butter or True Organic Refined Coconut Oil
- 1 teaspoon baking powder
- ½ teaspoon vanilla extract
- Pinch of salt
For Cooking:
- Additional butter or coconut oil for the pan
👩🍳 Instructions:
- Mix Dry Ingredients:
In a bowl, whisk flour, baking powder, sugar, and salt. - Add Wet Ingredients:
Add coconut milk, egg, vanilla, and melted coconut oil/butter.
Whisk until smooth—do not overmix. - Heat the Pan:
Set a non-stick skillet over medium heat and lightly grease with coconut oil. - Cook the Pancakes:
Pour ¼ cup batter for each pancake.
Cook until bubbles form on top and edges look set (about 2 minutes).
Flip and cook another 1–2 minutes until golden. - Serve:
Stack pancakes and top with maple syrup, fruits, or shredded coconut.
