🧾 Ingredients
Base
- 1 cup cooked quinoa or brown rice
- 1 cup baby spinach or mixed spring greens
Spring Veggies
- ½ cup cherry tomatoes (halved)
- ½ cup cucumber (sliced)
- ½ cup steamed asparagus or green beans
- ¼ cup red onion (thinly sliced)
- ½ avocado (sliced)
Protein (Optional)
- Grilled chicken, shrimp, tofu, or chickpeas
Lemon Herb Dressing
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- ½ tsp honey or maple syrup
- ¼ tsp salt
- ¼ tsp black pepper
- Pinch of garlic powder or fresh garlic
👩🍳 Instructions
- Cook quinoa or rice and let it cool slightly.
- Prepare and lightly steam spring vegetables.
- In a small bowl, whisk all dressing ingredients.
- Assemble bowl: greens → grains → veggies → protein.
- Drizzle with lemon herb dressing and toss gently.
