🧾 Ingredients

Base

  • 1 cup cooked quinoa or brown rice
  • 1 cup baby spinach or mixed spring greens

Spring Veggies

  • ½ cup cherry tomatoes (halved)
  • ½ cup cucumber (sliced)
  • ½ cup steamed asparagus or green beans
  • ¼ cup red onion (thinly sliced)
  • ½ avocado (sliced)

Protein (Optional)

  • Grilled chicken, shrimp, tofu, or chickpeas

Lemon Herb Dressing

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp honey or maple syrup
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Pinch of garlic powder or fresh garlic

  • Cook quinoa or rice and let it cool slightly.
  • Prepare and lightly steam spring vegetables.
  • In a small bowl, whisk all dressing ingredients.
