Lemongrass Coconut Rice Bowl (USA Style)

🧾 Ingredients:
- 1½ cups jasmine or basmati rice
- 1 cup coconut milk
- 1 cup water
- 1 tsp lemongrass powder
- ½ tsp salt
- ½ tsp ground black pepper
- 1 Tbsp olive oil or coconut oil
Toppings (Optional but Recommended):
- Grilled chicken, shrimp, or tofu
- Steamed broccoli or green beans
- Sliced cucumber
- Fresh cilantro
- Lime wedges
👩🍳 Instructions:
Cook the Rice:
Rinse rice well. Add rice, coconut milk, water, lemongrass powder, salt, and oil to a saucepan. Bring to a boil.
Simmer:
Reduce heat, cover, and cook for 15–18 minutes until rice is tender and liquid is absorbed.
Fluff & Serve:
Fluff rice with a fork. Season with black pepper.
Assemble Bowl:
Serve rice in bowls and top with protein, vegetables, and a squeeze of fresh lime.
