Unstuffed Pepper Bowls

🧾 Ingredients:
- 1 Tbsp olive oil
- 1 lb ground beef or turkey (or plant-based mince)
- 1 small onion, diced
- 3 bell peppers (red, yellow, green), chopped
- 3 cloves garlic, minced
- 1 cup cooked rice (white, brown, or cauliflower rice)
- 1 can (14.5 oz) diced tomatoes
- 2 Tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp ground black pepper
- Salt to taste
Optional toppings:
- shredded cheese
- fresh parsley
- sour cream
- avocado
👩🍳 Instructions:
Cook the Protein:
Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned. Drain excess fat if needed.
Sauté Veggies:
Add diced onion and garlic. Cook for 2–3 minutes until fragrant. Stir in chopped bell peppers and cook until slightly tender.
Build the Flavor:
Add diced tomatoes, tomato paste, paprika, oregano, black pepper, and salt. Simmer for 10–12 minutes until thick and flavorful.
Assemble Bowls:
Stir in cooked rice and cook for another 2–3 minutes until heated through.
Serve:
Spoon into bowls and top with cheese, herbs, or your favorite toppings.
