Ingredients
For the Bread:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon fine sea salt
- 1 teaspoon True Organic Cinnamon Powder
- 3 ripe bananas, mashed
- ½ cup organic cane sugar
- ¼ cup brown sugar
- ½ cup unsalted butter, melted
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
For the Cinnamon Swirl:
- ¼ cup brown sugar
- 1 tablespoon True Organic Cinnamon Powder
Directions
- Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and True Organic Cinnamon Powder.
- In a large bowl, whisk together mashed bananas, cane sugar, brown sugar, melted butter, eggs, and vanilla extract until smooth.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- In a small bowl, mix together brown sugar and True Organic Cinnamon Powder for the swirl.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon swirl mixture evenly over the batter. Top with remaining batter, then sprinkle with the rest of the cinnamon swirl mixture. Use a knife to gently swirl through the batter.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
