These no-bake vegan energy bites are infused with the warm, spicy goodness of organic ginger powder, balanced with natural sweetness from dates and maple syrup. They’re perfect for a midday pick-me-up, post-workout snack, or even a cozy dessert.

Ingredients
For the Energy Bites:
- 1 cup rolled oats
- Β½ cup almond flour
- 1 tablespoon True organic ginger powder
- Β½ teaspoon True Organic cinnamon powder
- ΒΌ teaspoon fine sea salt
- 1 cup Medjool dates, pitted
- 2 tablespoons maple syrup
- 1 teaspoon pure vanilla extract
- 2 tablespoons coconut oil, melted
- 2 tablespoons shredded True Organic unsweetened coconut (optional for coating)
Directions
- In a food processor, pulse the oats, almond flour, ginger powder, cinnamon, and salt until combined.
- Add dates, maple syrup, vanilla extract, and coconut oil. Pulse until the mixture sticks together when pressed between your fingers. If too dry, add 1 teaspoon water at a time.
- Scoop about 1 tablespoon of the mixture and roll into balls.
- If desired, roll balls in shredded coconut for an extra texture boost.
- Place energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to set.
- Store in an airtight container in the fridge for up to one week.
