Vanilla Bean Honey Butter Cookies

These melt-in-your-mouth butter cookies are infused with real vanilla bean and sweetened naturally with a touch of golden honey. Perfect for tea time, gifting, or anytime you crave something simply special.

Note: Total time listed does not include bringing ingredients to room temperature.

Ingredients

For the Cookies:

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup unsalted butter, softened
  • ½ cup raw honey
  • ½ cup organic cane sugar
  • 1 vanilla bean, split lengthwise and seeds scraped
  • 1 teaspoon pure vanilla extract
  • 1 large egg, room temperature

Optional for Dusting:

  • Additional cane sugar or powdered sugar

Directions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter, honey, cane sugar, and vanilla bean seeds together until fluffy, about 2–3 minutes. Add egg and vanilla extract; beat until combined.
  4. Gradually add dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Scoop dough by rounded tablespoons onto prepared baking sheets, spacing cookies about 2 inches apart. Lightly flatten each cookie with the palm of your hand.
  6. Bake for 10–12 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. Dust with additional sugar if desired before serving.
