These melt-in-your-mouth butter cookies are infused with real vanilla bean and sweetened naturally with a touch of golden honey. Perfect for tea time, gifting, or anytime you crave something simply special.

Ingredients
For the Cookies:
- 2 ¼ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- 1 cup unsalted butter, softened
- ½ cup raw honey
- ½ cup organic cane sugar
- 1 vanilla bean, split lengthwise and seeds scraped
- 1 teaspoon pure vanilla extract
- 1 large egg, room temperature
Optional for Dusting:
- Additional cane sugar or powdered sugar
Directions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter, honey, cane sugar, and vanilla bean seeds together until fluffy, about 2–3 minutes. Add egg and vanilla extract; beat until combined.
- Gradually add dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Scoop dough by rounded tablespoons onto prepared baking sheets, spacing cookies about 2 inches apart. Lightly flatten each cookie with the palm of your hand.
- Bake for 10–12 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Dust with additional sugar if desired before serving.
