Warm Cinnamon Baked Apples

Simple, fragrant, and filled with comforting spices, these Warm Cinnamon Baked Apples bring out the best of autumn flavors. With a soft, tender center and just the right touch of sweetness, they make for a wholesome dessert or a cozy breakfast — no crust required.

Ingredients

  • 4 large organic apples (Honeycrisp or Fuji work best)
  • ¼ cup chopped walnuts or pecans
  • ¼ cup rolled oats
  • 2 tablespoons maple syrup or honey
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon coconut oil or unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • ½ cup hot water

Directions

  1. Preheat oven to 375°F (190°C).
  2. Core the apples:
    Slice off the top of each apple and use a spoon or melon baller to scoop out the center, leaving the bottom intact to hold the filling.
  3. Make the filling:
    In a small bowl, combine chopped nuts, oats, maple syrup, cinnamon, nutmeg, melted coconut oil, vanilla, and sea salt. Stir until well mixed.
  4. Stuff the apples:
    Spoon the filling into each apple cavity, pressing down gently. Place apples in a small baking dish.
  5. Bake:
    Pour hot water into the bottom of the dish to keep apples moist. Cover loosely with foil and bake for 30 minutes. Uncover and bake another 10–15 minutes, or until apples are tender and slightly golden.
  6. Cool & serve:
    Let cool slightly before serving. Enjoy warm as-is, or top with a scoop of vanilla yogurt or dairy-free ice cream.
