I bought these to use for canning sweet pickles. They are great quality rolled up sticks - not broken shreds. They not only look great in the jars, but add fantastic cinnamon flavor.
Ceylon cinnamon is generally thinner rolls with more layers, with a weaker aroma and taste, but also a somewhat different flavor. More importantly it has dramatically lower levels of coumarin, so is safer to eat in larger quantities. I've tried a few brands of Ceylon cinnamon and so far, this has been the freshest with the strongest odor/flavor (though still less than Cassia, of course).
